Buttermilk Pie

Mmmm, I love the addition of bourbon here. Way to elevate a Southern classic! Buttermilk pie is a) the best anyway and now b) being considered for a spot on my Thanksgiving table–this recipe quite specifically–as if we didn’t have a large enough spread already.. dammit!

INGREDIENTS

  • 1/4 teaspoon kosher salt
  • 1/2 cup unsalted butter — melted and cooled
  • 3/4 cup buttermilk
  • 1 1/2 teaspoons vanilla extract
  • 1/8 teaspoon nutmeg — freshly grated if possible
  • Homemade whipped cream — optional, for serving
  • 2 tablespoons bourbon — or whiskey or additional 1 1/2 teaspoons pure vanilla extract
  • 1 teaspoon lemon zest — (from about 1 small lemon)
  • 1 tablespoon freshly squeezed lemon juice
  • 1 unbaked whole wheat pastry crust — or 9-inch pie crust of choice
  • 3 large eggs
  • 1 cup granulated sugar — plus 2 tablespoons
  • 3 tablespoons all purpose flour


Instructions

  1. Frist, Prepare and roll out the pie crust. Transfer it to a standard 9-inch pie dish. 
  2. Then Trim the edge almost even with the edge of the pan Fold the edges under and crimp with your fingers or a fork. Refrigerate while you prepare the filling.
  3. Place one rack in the lower third of the oven and one in the center of the oven. 
  4. Then Preheat to 325 degrees F. In a large bowl, beat the eggs on low speed just until mixed, then add sugar, flour, and salt, mixing until evenly blended. Add the melted butter and mix well.
  5. Gently stir in buttermilk, bourbon, lemon zest, lemon juice, vanilla, and nutmeg. 
  6. Then Pour into prepared pie shell. Gently place the pie dish on a rimmed baking sheet.
  7. Then Bake pie at the bottom of oven for 20 minutes, then carefully transfer to center of oven bake an additional 40 minutes, until the center is set and a thin crust forms on top. Check the pie 30 minutes into baking and periodically towards the end of the baking—if at any point the crust is browning too quickly, shield it with foil or a pie shield and continue baking as directed. 
  8. Serve warm, cool, or at room temperature, topped with whipped cream as desired.
