How To Make Chicken Marinade

This is a great multipurpose chicken recipe, whether you want to bake, bake, or BBQ. It works for both breasts and thighs, and has a delicious Greek inspired taste. This is very easy to make, and is suitable for a variety of healthy diets including low carbohydrates, keto, and paleo.

TIPS FOR MARINATION CHICKEN

This marinade is designed for about 1 to 1 1/2 pounds of chicken. You can use breasts or thighs, and must be boneless and skinless. Pat the chicken with a paper towel before marinating, to avoid diluting the marinade.

I prefer to use a bag that can be resealed rather than a plate to hold chicken and marinade. A bag can easily form a chicken shape and provide better coverage, while a dish often means that one side of the chicken is not fully exposed to the bath. Bags that can be resealed also mean less cleaning.

Soak for at least 1 hour and up to several hours in the refrigerator. Avoid marinating too long - you will run the risk of flaccid chicken when the acid in the spices begins to break down the meat.

WHAT TO DO WITH MARINATION CHICKEN

Here are two popular ways to cook marinated chicken for various purposes:

Grilled chicken. Turn on the grill to make grilled chicken, which can be used in chicken fajitas, salads, kabobs, and casseroles. This is good for summer barbecues. Using a heated grill, it takes about 10 minutes (turning half) for the chicken breast until you get a good burn mark and it's cooked.

Grilled chicken. Roasting is another good choice. I recommend making Greek Chicken (picture below), which uses this marinade along with cherry tomatoes, onions, and zucchini. It was a very comfortable dinner. It takes about 45 minutes at 400 F for boneless and skinless chicken breast.

Ingredients
2 boneless skinless chicken breasts (1 - 1 1/2 pounds total) or thighs
Marinade:
  • 1/4 cup of olive oil
  • 1/4 cup of fresh lemon juice
  • 5 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon of black pepper
Instructions

Use paper towels to pat the chicken breasts dry. In a bowl, add all the marinade ingredients and stir until mixed.

In a resealable bag or shallow dish, add chicken and marinade. Arrange the chicken breasts are they're coated with the marinade on all sides.

Marinate in the refrigerator for at least 1 hour.

Recommendation: Use the marinated chicken to make baked Greek Chicken.
