HOW TO MAKE SALAD CHICKPEA

Chickpea salad is a version of egg salad or vegan tuna salad. Mashed beans are mixed with ingredients such as vegan mayo, lemon, celery, red onion, dijon, and other favorite egg salads. This can be eaten alone for quick snacks or food or stacked into packs or sandwiches made with your favorite bread.

For this version, I only use a few simple ingredients: sriracha, vegan mayo, lemon, sea salt, pepper and garlic powder. You can give a short bean fast pulse in the food processor to break it down or you can mash it in a bowl with a potato fork or masher.

INGREDIENTS


  • 2 cans of 15 oz long beans, rinsed and dried well (3.5 cups cooked beans)
  • 2-3 tablespoons of Sriracha sauce (start with 2 tablespoons, add more according to your needs or to taste)
  • 2–3 tbsp vegan mayo or tahini (start with 2 tbsp, add more according to your needs or sufficient)
  • 1-2 tablespoons of fresh lemon juice (start with 1 tbsp, add more according to your needs or to taste)
  • 1 tsp garlic powder
  • 1/2 tsp each salt and pepper or more to taste
  • 1 cup of coriander packaged lightly, chopped
  • big tortillas
  • spinach
  • 1/2 avocado per pack



INSTRUCTIONS

Place the beans in a blender or food processor and the pulse until the beans are mostly crushed or mashed in a bowl with a fork or potato peeler. It must be chunky but it starts to survive together.

Mix the bean mixture in the mixing bowl with everything except spinach and avocado. Mix well. The mixture must resemble an egg or tuna salad. Adjust the amount of sriracha, mayo and lemon according to taste or desired consistency.

To assemble the package, put one spoonful of bean mixture into each packet then give spinach and avocado. Season with salt and pepper, if desired.
Roll and enjoy!
