This is absolutely a meat lovers rice dish. I’ve used a complete pound of contemporary Chorizo sausage, the Mexican kind. Not the cured Spanish kind. It’s a beef sausage with plenty of seasonings, adding paprika. Look for it within the beef part of your grocery store, typically with the flooring Italian sausage.

Ingredients
1 (14.5-ounce) can bird broth
1 cup lengthy grain rice
1 pound Mexican-style chorizo
1/2 yellow onion, chopped
1 clove garlic, minced
1 (10-ounce) can diced tomatoes and inexperienced chilies
1 cup frozen corn, defrosted
chopped contemporary cilantro, optional
Chipotle flavored TABASCO Sauce, optional
Instructions
Bring bird broth to a boil in a medium saucepan. Stir in rice, cover, and simmer for 15 minutes.
Add chorizo to a huge nonstick pan over medium heat. Use a wood spoon to destroy it into small pieces. Once partially cooked, upload onion and garlic and retain to prepare dinner till chorizo is cooked by means of and onion is soft.
Add tomatoes and corn to the chorizo and allow simmer for about 5 minutes to prepare dinner off a few of the liquid.
Stir in rice. Serve with cilantro and TABASCO if desired.
