Now you will know that I am obsessed with potatoes. With so many potato recipes already on the blog, it's clear that I'm a potato addict.
When I cook with potatoes, you see me happy in the kitchen. Not only me, my children and Raj too. They love potatoes in all forms as I like. I WANT, even before the potato dish reaches the dining table, 1/3 of it disappears. I can't refuse potatoes! I can't stop popping up in my mouth. And that's what you will see every time I cook potatoes. The real joy of eating hot potato slices is unmatched. If there is a food paradise then eat potatoes straight from the tray right from the oven!
Potato slices are truly amazing finger food; I would say one of the best inventions with potatoes, of course, is next to french fries and potato chips. This incredible slice made me imagine a group of friends at a restaurant or pub table chatting, laughing and the inevitable thing on the table was french fries. And potato slices are the second favorite potato dish in most restaurants and pubs.
Ingredients
- 5 russet's big potatoes are ideal
- 4 tablespoons olive oil
- 2 teaspoon garlic powder
- 1½ teaspoon paprika
- 2 tablespoon Italian herbs
- 2 teaspoon salt or to taste
- 3 tablespoon Parmesan powdered cheese
- For garnish
- Fresh parsley for garnish
Instructions
Prep wedges - Scrub and rinse potatoes to get rid of any dirt. Pat dry the potatoes on kitchen towels.
Cut-each-potatoes in half length-wise, cut each half are half-length-wise and then cut the half in half. You get 8 wedges from each potato.
At this stage you can soak the 15-20 minutes and then start using them. I skipped the soaking step. Because I got so much creative baked potatoes without being so why bother about extra step here: D.
Season - Use a large mixing bowl and add the potato wedges and ingredients into the bowl and mix. Or if you are lazy like me, then throw the wedges straight on the baking tray, add oil and seasoning, and mix with your hands. Easy!
Bake the best potato wedges - Arrange the wedges in a single layer on the baking tray. Pop the tray into a pre-heated oven. Use pre-heated oven at 400 F for 35 minutes, spray oil after turning, until golden, crisp and cooked through tested with a fork.
Serving - Sprinkle with fresh parsley and some more Parmesan. Serve immediately.
