INGREDIENTS
3 kilos tomatillos, husks removed
1 pint cherry tomatoes
2 big jalapeno peppers
1 big onion, cut into 8 pieces
1 head of garlic, separated into cloves and peeled
large handful of cilantro, stems and leaves
juice of one lime
kosher salt, to taste
INSTRUCTIONS
Place an oven rack a couple of inches underneath the broiler. Set the broiler to high.
Place the tomatillos, cherry tomatoes, jalapenos, onion wedges, and garlic on a big roasting pan. Broil for 6-7 minutes, till tomatillos and onions bounce to blacken. Flip foods over and broil one more 6-7 minutes, till everything is smooth and charred. If your broiler heats unevenly, slide the pan from one part of the oven to the different midway by cooking time for every part of the vegetables.
Allow the vegetables to sit at the roasting pan till cool sufficient to handle, about 15 minutes. Remove the seeds from the jalapenos (leave in for additional spicy salsa!). Place the vegetables right into a meals processor or blender, pouring within the accumulated juices at the sheet pan. Puree till small chunks remain. Add within the cilantro, lime juice, and a pinch of salt, and pulse to combine. Taste and upload additional salt if necessary.
NOTES
The salsa verde will hold in a sealed container within the refrigerator for up a week. For longer storage, cool within the refrigerator after which move to the freezer for as much as 6 months.
